Tuesdays With Dorie : Popovers


Today's recipe is Popovers.. According to Wikipedia "The popover is an American version of Yorkshire pudding and similar batter puddings made in England since the 17th century,[2] though it has evolved considerably.[3]It is selected for this month to honor Marion Cunningham, who contributed this recipe to Baking With Julia and has died in July 2012.. I had never eaten or seen these crispy outside hollow inside eggy bread before trying this recipe.. That is why, I don't know whether mine ended up being a good one or not..

I like that the recipe is as easy as it gets with the ingredients one always has at home.. You mix all-purpose flour, melted butter, salt, milk and eggs in a blender (I used food processor) and pour the batter into muffin or custard cups.. Then, bake at high temperature until they are puffed, browned and crisp at the exterior, and decrease the temperature and bake a bit more to dry the interior.. And they are ready to eat as soon as they come out of the oven.. My only problem with the recipe was the baking times mentioned in the book.. Although I took them out of the oven before the mentioned baking time was finished, mine were still over baked.. If I bake these again I will decrease the baking times for both temperatures..

They do not have any particular flavour.. I enjoyed my popovers with feta and honey right after I took the above picture.. The exterior was very crispy and inside was empty with some stringy dough right under the crust.. I don't know if it was supposed to be like that or is it because mine were over baked.. The book says the inside should be custardy, mine definitely was not..

  1. I agree the baking time was to long. I love the idea of Feta and honey. I had mine with butter and jam. I liked them and can't wait to make them for the grand kids.

  2. i had the same issue.. i couldnt figure out when they came out whether i had done them right!! but yours look crispy and hollow alright!! wasnt too crazy with the recipe!!

    1. Next time, I will decrease the high temperature baking by 10 minutes I think.. It was way too long..

  4. For the 2nd baking time I went with only 15 minutes and they came out perfect. You are right about the taste which makes them great to put whatever you want ontop!

  5. Feta and Honey, wow this is a great combination.
    I've never ever dreamt of putting them together, but I love Feta, I love honey = absolutely delicious.

    I've made some sweet and some cheesy (Grana cheese) adding some rosemary and spices...
    This recipe is a winner!

    1. Flavored popovers sound delicious..

      We love our feta (as we call white cheese) in Turkey.. It is a good combo, try it one day.. Another odd combo with feta is watermelon..

    1. Mine needed a significant deduction from the baking time.. I don't know why, I have thermometer in my oven so it should be the exact temperature..

  12. cok guzel gorunuyor. bakalim ben de yapmaya calisacagim bunu. cok uygun muffin kuplari bulamadim ama sekli nasi olur bilmem.

    1. Cok kolay yapmasi.. Custard cup gibi biseyler bulsan da olur.. Yalniz iyi yaglaman lazim yoksa yapisiyomus.. Ben muffin kabinda yaptim, hic yapismadi..

      Kahvalti icin yap bence firindan ciktigi gibi yeniyor.. Cok ozel bir tadi yok kendisinin kahvaltiliklarla iyi gidiyor ama..

    1. Me neither.. There are so many delicious baked goods, this would not compare.. But it is a good alternative to bread for breakfast.. I enjoyed it with feta and honey..

  15. i agree with the baking time issue especially on the first part at high heat. i will reduce that next time. Yours look great, they came out with way they were supposed to.

  16. They look like they turned out and I'd say your instinct to fill with feta and honey (salty and sweet) was right on. I did shorten the baking time a bit and increased the salt and added a little sugar the second time and they had more flavor.
